Ingredients

  • 2 cups all-purpose flour
  • 1/3 cup sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 8 tablespoons unsalted butter, frozen
  • 1/2 cup dried cranberries
  • Zest of 1 large orange
  • 1/2 cup whole milk
  • 1 large egg

Directions

  1. Preheat your oven to 400 degrees F (200 degrees C) and line a baking sheet with parchment paper.
  2. In a medium bowl, combine the flour, sugar, baking powder, baking soda, and salt.
  3. Grate the frozen butter into the flour mixture and mix with your fingers until it resembles coarse meal.
  4. Stir in the cranberries and orange zest.
  5. In another bowl, whisk together the milk and egg. Pour this into the flour mixture and stir until just combined.
  6. Turn the dough out onto a floured surface and knead it a few times to bring it together.
  7. Pat the dough into a 1-inch thick circle and cut it into 8 wedges.
  8. Place the wedges onto the prepared baking sheet and bake for 15-17 minutes, or until golden brown.

Notes/Tips

For a sweeter scone, you can add a glaze on top. Combine 1 cup of powdered sugar with 2 tablespoons of orange juice and drizzle over the scones when they are cool. Remember, the key to a great scone is not overworking the dough. Handle it as little as possible for the flakiest, most tender scones.
