  • 4 large eggs

  • 4 large flour tortillas
  • Sour cream and salsa for serving


  1. In a bowl, whisk together the eggs, milk, salt, and pepper until well combined.

  4. Place a tortilla on a clean surface. Sprinkle a quarter of the cheese on one half of the tortilla, followed by a quarter of the egg mixture. Fold the tortilla in half, pressing down gently to close it.
  5. Heat the remaining olive oil in a clean pan over medium heat. Cook the quesadilla for about 2-3 minutes on each side, until the tortilla is golden and crispy, and the cheese is melted. Repeat this process with the remaining tortillas and filling.
  6. Serve your breakfast quesadilla with a side of sour cream and salsa. Enjoy!
