Veggie Omelette: A Healthy and Delicious Breakfast Option

Ingredients:

  • 4 large eggs

  • 1/2 cup of chopped bell peppers
  • 1/2 cup of chopped onions
  • 1/2 cup of chopped tomatoes
  • 1/4 cup of shredded cheddar cheese
  • Salt and pepper to taste
  • 2 tablespoons of olive oil

Directions:

  1. In a bowl, whisk the eggs and milk together until frothy. Season with salt and pepper.
  2. Heat olive oil in a non-stick pan over medium heat. Add onions and bell peppers, and sauté until they are soft.
  3. Add tomatoes to the pan and cook until they’re soft.
  4. Pour the egg mixture into the pan over the veggies. Sprinkle the cheese on top.
  5. Cook on medium heat until the eggs are set. Use a spatula to fold the omelette in half.
  6. When the omelette is golden brown on both sides, it’s done. Serve hot.
