Veggie Omelette: A Healthy and Delicious Breakfast Option

Ingredients:
- 4 large eggs
- 1/4 cup of milk
- 1/2 cup of chopped bell peppers
- 1/2 cup of chopped onions
- 1/2 cup of chopped tomatoes
- 1/4 cup of shredded cheddar cheese
- Salt and pepper to taste
- 2 tablespoons of olive oil
Directions:
- In a bowl, whisk the eggs and milk together until frothy. Season with salt and pepper.
- Heat olive oil in a non-stick pan over medium heat. Add onions and bell peppers, and sauté until they are soft.
- Add tomatoes to the pan and cook until they’re soft.
- Pour the egg mixture into the pan over the veggies. Sprinkle the cheese on top.
- Cook on medium heat until the eggs are set. Use a spatula to fold the omelette in half.
- When the omelette is golden brown on both sides, it’s done. Serve hot.

- For a fluffy omelette, add a splash of water in with the eggs while beating. The water turns to steam while cooking and makes the omelette fluffy.
