Italian Wedding Soup

Welcome to my kitchen! Today, I’m going to share with you my delicious Italian Wedding Soup recipe. This classic Italian dish is a perfect combination of flavors and textures, and it’s sure to be a hit at your next gathering. So let’s get cooking!

  • 500 grams (1 pound) ground beef
  • 1 large onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 2 large eggs, lightly beaten
  • 1 liter (4 cups) chicken broth
  • 2 cups fresh spinach, chopped
  • 1/2 cup small pasta, such as orzo or acini di pepe
  • Salt and pepper to taste

  1. In a large bowl, combine the ground beef, onion, garlic, breadcrumbs, Parmesan cheese, eggs, salt, and pepper. Mix well until all the ingredients are evenly incorporated.
  2. Shape the mixture into small meatballs, about the size of a golf ball. Place the meatballs on a baking sheet lined with parchment paper.
  3. In a large pot, bring the chicken broth to a boil. Carefully add the meatballs to the boiling broth and cook for about 10 minutes, or until they are cooked through.
  4. Add the chopped spinach and pasta to the pot and cook for an additional 5-7 minutes, or until the pasta is tender.
  5. Season the soup with salt and pepper to taste.
  6. Serve hot and enjoy!

Italian Wedding Soup is a versatile dish, so feel free to customize it to your liking. You can add other vegetables such as carrots or celery, or even substitute the ground beef with ground turkey or chicken for a lighter version. This soup also freezes well, so you can make a big batch and save some for later.

I hope you enjoy making and eating this delicious Italian Wedding Soup as much as I do. Buon appetito!
