Ingredients

  • 500 grams (1 pound) ground beef
  • 1 large onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 2 large eggs, lightly beaten
  • 1 liter (4 cups) chicken broth
  • 2 cups fresh spinach, chopped
  • 1/2 cup small pasta, such as orzo or acini di pepe
  • Salt and pepper to taste

Directions

  1. In a large bowl, combine the ground beef, onion, garlic, breadcrumbs, Parmesan cheese, eggs, salt, and pepper. Mix well until all the ingredients are evenly incorporated.
  2. Shape the mixture into small meatballs, about the size of a golf ball. Place the meatballs on a baking sheet lined with parchment paper.
  3. In a large pot, bring the chicken broth to a boil. Carefully add the meatballs to the boiling broth and cook for about 10 minutes, or until they are cooked through.
  4. Add the chopped spinach and pasta to the pot and cook for an additional 5-7 minutes, or until the pasta is tender.
