Chicken Saltimbocca Recipe

Chicken Saltimbocca is a delicious and easy dish to prepare. It is perfect for a weeknight meal or for a special occasion. This dish is made with chicken breasts, prosciutto, sage leaves, and cheese.

Ingredients

  • 500 grams (1 pound) boneless, skinless chicken breasts
  • 8 thin slices of prosciutto
  • 8 sage leaves
  • 30 grams (1/4 cup) grated Parmesan cheese
  • 60 grams (1/2 cup) all-purpose flour
  • 2 tablespoons olive oil
  • 120 ml (1/2 cup) chicken broth

Directions

  1. Preheat the oven to 200 degrees Celsius (400 degrees Fahrenheit).
  2. Pound the chicken breasts until they are about 1/4-inch thick.
  3. Place a slice of prosciutto, a sage leaf, and a sprinkle of Parmesan cheese on each chicken breast.
  4. Roll the chicken up and secure with a toothpick.
  5. Dredge the chicken in flour, shaking off any excess.
  6. Heat olive oil in a large ovenproof skillet over medium-high heat.
  7. Add the chicken to the skillet and cook for 3 minutes per side, or until golden brown.
  8. Add the chicken broth to the skillet and place it in the preheated oven.
  9. Bake for 12 minutes, or until the chicken is cooked through.

Notes/Tips

  • If you have any leftover chicken saltimbocca, it makes a great sandwich the next day.
  • You can also prepare this dish in the slow cooker. Cook the chicken on low for 4 hours or on high for 2 hours.
