Ingredients
- 500 grams (1 pound) boneless, skinless chicken breasts
- 8 thin slices of prosciutto
- 8 sage leaves
- 30 grams (1/4 cup) grated Parmesan cheese
- 60 grams (1/2 cup) all-purpose flour
- 2 tablespoons olive oil
- 120 ml (1/2 cup) chicken broth
Directions
- Preheat the oven to 200 degrees Celsius (400 degrees Fahrenheit).
- Pound the chicken breasts until they are about 1/4-inch thick.
- Place a slice of prosciutto, a sage leaf, and a sprinkle of Parmesan cheese on each chicken breast.
- Roll the chicken up and secure with a toothpick.
- Dredge the chicken in flour, shaking off any excess.
- Heat olive oil in a large ovenproof skillet over medium-high heat.
- Add the chicken to the skillet and cook for 3 minutes per side, or until golden brown.
- Add the chicken broth to the skillet and place it in the preheated oven.
- Bake for 12 minutes, or until the chicken is cooked through.
Notes/Tips
- If you have any leftover chicken saltimbocca, it makes a great sandwich the next day.
- You can also prepare this dish in the slow cooker. Cook the chicken on low for 4 hours or on high for 2 hours.
