This dish is a delightful fusion of flavors, combining the earthiness of portobello mushrooms with the freshness of caprese salad.   • 4 large portobello mushrooms
  • 120 grams (1/2 cup) of balsamic vinegar
  • 60 ml (1/4 cup) of olive oil
  • 1/4 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 60 grams (1/2 cup) of mozzarella cheese
  • 30 grams (1/4 cup) of parmesan cheese
  • 120 grams (1/2 cup) of cherry tomatoes
  • 30 grams (1/4 cup) of fresh basil leaves


  1. Preheat your oven to 175°C (350°F).
  2. Remove the stems from the portobello mushrooms and discard them.
  3. In a small bowl, whisk together the balsamic vinegar, olive oil, salt, and black pepper.
  4. Brush the mixture over the mushrooms, making sure to evenly coat them.
  5. Place the mushrooms on a baking sheet and bake in the preheated oven for 10 minutes.
  6. Remove the mushrooms from the oven and sprinkle the mozzarella and parmesan cheeses evenly over each mushroom.
  7. Top the mushrooms with cherry tomatoes and fresh basil leaves.
  8. Return the mushrooms to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
  9. Once done, remove the mushrooms from the oven and let them cool for a few minutes.
  10. Serve the Caprese-Stuffed Portobello Mushrooms warm and enjoy!


  • If you don’t have portobello mushrooms, you can use white or baby bella mushrooms as substitutes.
  • If you don’t have balsamic vinegar, you can substitute it with red wine vinegar or apple cider vinegar.
