Introduction
Dakjuk, also known as Korean Chicken Porridge, is a comforting and nutritious dish that is often consumed in Korea, especially during cold winter months or when feeling under the weather. This simple yet flavorful porridge is made with tender chicken, rice, and various seasonings, creating a soothing meal that is gentle on the stomach and easy to digest.
Ingredients
- 1 cup of short-grain rice
- 1 pound boneless, skinless chicken breast
- 6 cups of chicken broth
- 2 cloves of garlic, minced
- 1 small onion, finely chopped
- 1 tablespoon soy sauce
- Salt and pepper to taste
- Sesame oil and chopped green onions for garnish
Directions
- Rinse the rice under cold water until the water runs clear. Drain and set aside.
- In a pot, combine the chicken broth, chicken breast, garlic, onion, soy sauce, salt, and pepper. Bring to a boil over medium heat.
- Reduce heat to low, cover the pot, and simmer for about 20-25 minutes until the chicken is fully cooked.
- Remove the chicken from the pot, shred it using two forks, and return it to the pot.
- Add the rinsed rice to the pot and cook for an additional 20-25 minutes, stirring occasionally until the rice is soft and the porridge has thickened.
- Adjust the seasoning with salt and pepper as needed.
- Serve the Dakjuk hot, drizzled with sesame oil and garnished with chopped green onions.
