Ingredients

  • 500g (1.1lb) of polenta
  • 1.5 liters (6 cups) of vegetable stock
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 zucchini
  • 1 eggplant
  • 1 red onion
  • 4 cloves of garlic
  • 2 tablespoons of olive oil
  • 1 teaspoon of dried thyme
  • Salt and pepper to taste

Directions

  1. Preheat your grill to medium-high heat.
  2. In a large pot, bring the vegetable stock to a boil. Slowly add the polenta while whisking continuously to prevent clumps. Lower the heat to medium-low and cook for 20 minutes, stirring occasionally, until the polenta thickens and becomes creamy.
  3. Meanwhile, prepare the roasted vegetables. Cut the bell peppers, zucchini, eggplant, and red onion into bite-sized pieces. Crush the garlic cloves and set aside.
  4. In a large bowl, toss the vegetables with olive oil, dried thyme, salt, and pepper until well coated.
  5. Spread the vegetables evenly on a baking sheet and roast in the preheated oven at 200°C (400°F) for about 20-25 minutes, or until they are tender and slightly caramelized.
  6. While the vegetables are roasting, remove the polenta from the heat and let it cool slightly.
  7. Once cooled, pour the polenta into a greased baking dish and smooth the surface with a spatula.
  8. Place the baking dish on the grill and cook for about 10 minutes, or until the polenta is firm and has grill marks.
  9. Remove the polenta from the grill and let it rest for a few minutes.
  10. Serve the grilled polenta with the roasted vegetables on top, and garnish with fresh herbs if desired.
