Sausage and Mushroom Risotto Recipe

This Italian dish is a comforting and flavorful combination of creamy risotto, savory sausage, and earthy mushrooms. Ingredients
- 300g (10.5oz) Arborio rice
- 400g (14oz) Italian sausage, removed from casings
- 200g (7oz) mushrooms, sliced
- 1 onion, finely chopped
- 3 cloves of garlic, minced
- 1 liter (4 cups) chicken or vegetable broth
- 120ml (1/2 cup) white wine
- 60g (1/2 cup) grated Parmesan cheese
- 2 tablespoons butter
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Directions
- In a large saucepan, heat the olive oil over medium heat. Add the sausage and cook until browned, breaking it up into small pieces with a wooden spoon.
- Remove the sausage from the pan and set aside. In the same pan, add the butter and onion. Cook until the onion is translucent.
- Add the mushrooms and garlic to the pan. Cook until the mushrooms are tender and golden brown.
- Return the sausage to the pan and add the Arborio rice. Stir well to coat the rice with the mixture.
- Pour in the white wine and cook until it is absorbed by the rice.
- Gradually add the chicken or vegetable broth, about 1/2 cup at a time, stirring constantly until the liquid is absorbed before adding more.
- Continue adding the broth and stirring until the rice is cooked al dente, tender with a slight firmness in the center. This process will take about 20-25 minutes.
- Remove the pan from heat and stir in the grated Parmesan cheese. Season with salt and pepper to taste.
- Cover the risotto and let it rest for a few minutes to allow the flavors to meld together.
- Garnish with fresh parsley and serve hot. Enjoy!
Notes/Tips
- For a vegetarian version, you can substitute the sausage with plant-based sausages or omit it entirely.
- Feel free to add other vegetables like peas or spinach to the risotto for added flavor and nutritional value.
- To make the risotto extra creamy, you can stir in a splash of heavy cream or mascarpone cheese at the end.
