Ingredients
- 4 large eggs
- 1/4 cup whole milk
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1/2 cup diced bell peppers
- 1/2 cup diced onions
- 1 cup shredded cheddar cheese
- 4 large flour tortillas
- Sour cream and salsa for serving
Directions
- In a bowl, whisk together the eggs, milk, salt, and pepper until well combined.
- Heat one tablespoon of olive oil in a non-stick pan over medium heat. Add the diced peppers and onions, cooking until they are soft and slightly caramelized.
- Pour the egg mixture into the pan with the cooked veggies, stirring gently until the eggs are cooked to your liking. Remove the pan from the heat.
- Place a tortilla on a clean surface. Sprinkle a quarter of the cheese on one half of the tortilla, followed by a quarter of the egg mixture. Fold the tortilla in half, pressing down gently to close it.
- Heat the remaining olive oil in a clean pan over medium heat. Cook the quesadilla for about 2-3 minutes on each side, until the tortilla is golden and crispy, and the cheese is melted. Repeat this process with the remaining tortillas and filling.
- Serve your breakfast quesadilla with a side of sour cream and salsa. Enjoy!
