Tuscan White Bean Soup Recipe

Welcome to my kitchen! Today, I’m going to share with you a delicious recipe for Tuscan white bean soup. This hearty and filling soup is perfect for a cozy winter meal. Made with simple ingredients, it’s easy to prepare and guaranteed to warm you up on a chilly day.

Ingredients

  • 1 tablespoon (15ml) olive oil
  • 1 onion, diced
  • 3 cloves of garlic, minced
  • 4 cups (950ml) chicken broth
  • 1 can (15oz/425g) white beans, drained and rinsed
  • 1/2 cup (50g) grated Parmesan cheese
  • Salt and pepper to taste

Directions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the diced onion and minced garlic to the pot, and cook until softened, about 3 minutes.
  3. Pour in the chicken broth and add the white beans. Bring the mixture to a boil.
  4. Reduce the heat to low and let the soup simmer for 10 minutes, allowing the flavors to meld together.
  5. Stir in the grated Parmesan cheese, and season with salt and pepper to taste.
