Shrimp in Mango Sauce

Ingredients:

For the Shrimp:

  1. Shrimp: 1 pound (450 grams), peeled and deveined
  2. Salt: To taste
  3. Pepper: To taste
  4. Garlic Powder: 1 teaspoon
  5. Olive Oil: 2 tablespoons, for cooking

For the Mango Sauce:

  1. Ripe Mangoes: 2, peeled and chopped
  2. Garlic Cloves: 2, minced
  3. Ginger: 1 teaspoon, grated
  4. Lime Juice: From 1 lime
  5. Honey: 1 tablespoon
  6. Chili Flakes: ½ teaspoon (optional, for a spicy kick)
  7. Salt: To taste
  8. Fresh Cilantro: A small bunch, chopped (for garnish)

Instructions:

Preparing the Shrimp:

  1. Season the Shrimp: In a bowl, toss the shrimp with salt, pepper, and garlic powder.
  2. Cook the Shrimp: Heat olive oil in a pan over medium-high heat. Add the shrimp and cook for about 2 minutes on each side, or until they turn pink and are cooked through. Remove from the pan and set aside.

Making the Mango Sauce:

  1. Blend Mangoes: In a blender, combine the chopped mangoes, garlic, ginger, lime juice, honey, and chili flakes. Blend until smooth.
  2. Cook the Sauce: Pour the mango sauce into the same pan used for shrimp. Cook over medium heat for about 5 minutes, stirring occasionally. If the sauce is too thick, add a little water to reach your desired consistency. Season with salt to taste.
  3. Combine Shrimp and Sauce: Add the cooked shrimp to the mango sauce and stir to coat. Heat through for an additional 1-2 minutes.

Serving:

  • Serve the shrimp in mango sauce over a bed of steamed rice or with your choice of side. Garnish with freshly chopped cilantro.

Tips:

  • Choosing Mangoes: Use ripe mangoes for a sweeter and smoother sauce. If mangoes are not in season, you can use canned mango pulp.
  • Shrimp Preparation: Make sure the shrimp are well-drained and dry before seasoning and cooking to get a nice sear.
  • Sauce Consistency: Adjust the consistency of the sauce according to your preference by adding water to thin it out or cooking it longer to thicken.
