Pasta Primavera Recipe with Lemon Parmesan Sauce

Introduction

Ingredients

  • 500 grams (1 lb) of pasta
  • 1 tablespoon of salt
  • 2 tablespoons of olive oil
  • 1 broccoli head, cut into florets
  • 1 can of artichoke hearts, drained and quartered
  • 1/2 cup of sun-dried tomatoes, sliced
  • For the Lemon Parmesan Sauce:
  • 1/2 cup of grated Parmesan cheese
  • 1/4 cup of lemon juice
  • 1/4 cup of olive oil
  • 2 cloves of garlic, minced
  • 1/4 teaspoon of salt
  • 1/4 teaspoon of black pepper

Directions

  1. Boil the pasta in a large pot of salted water according to the package instructions. Drain and set aside.
  2. In a skillet, heat the olive oil over medium-high heat.
  3. Add the broccoli, artichoke hearts, and sun-dried tomatoes to the skillet. Cook for 3-5 minutes, or until the vegetables are slightly softened.
  4. In a separate bowl, whisk together the grated Parmesan cheese, lemon juice, olive oil, minced garlic, salt, and black pepper to make the Lemon Parmesan Sauce.
  5. Add the cooked pasta to the skillet with the vegetables.
  6. Pour the Lemon Parmesan Sauce over the pasta and vegetables. Toss well to coat everything evenly.
  7. Garnish with freshly chopped parsley and serve hot.

Notes/Tips

  • The Lemon Parmesan Sauce can be made ahead of time and stored in the refrigerator.
  • Feel free to substitute the vegetables in this recipe with any other vegetables you like, such as bell peppers, zucchini, or mushrooms.
  • You can also add grilled chicken or shrimp to make it a heartier meal.
