  3. Pour a thin layer of the egg mixture into the pan, just enough to cover the bottom. As the eggs start to set, gently roll them from one end of the pan to the other using chopsticks or a spatula.
  4. Once the first layer is rolled, push it to the original side of the pan and add a little more oil if needed. Pour another thin layer of the egg mixture to cover the bottom of the pan and under the first roll.
  5. When the second layer is partially set, roll it up from one end to the other, tucking it under the first roll. Repeat this process, adding more oil and egg mixture as needed, until all the egg is used.
  6. Once the omelette is fully cooked and has a nice rectangular shape, transfer it to a bamboo mat and shape it while it’s still warm. Allow it to cool slightly before slicing and serving.
