Creamy Polenta with Wild Mushrooms Recipe

Ingredients
- 1 cup (240ml) polenta
- 1 cup (240ml) vegetable broth
- 1/2 cup (50g) grated Parmesan cheese
- 1/4 cup (60ml) milk
- 1/4 cup (56g) butter
- 1 garlic clove, minced
- 1/2 teaspoon (2.5g) salt
- 1/4 teaspoon (0.5g) black pepper
- 1/4 teaspoon (0.5g) dried thyme
- 1/4 teaspoon (0.5g) dried basil
- 1/4 teaspoon (0.5g) dried oregano
- 1/4 teaspoon (0.5g) dried marjoram
- 1/4 teaspoon (0.5g) dried parsley
- 1/4 teaspoon (0.5g) red pepper flakes
- 1/4 pound (113g) wild mushrooms, sliced
Directions
- In a medium saucepan, bring the vegetable broth to a boil.
- Add the polenta and stir to combine. Reduce the heat to low and simmer, stirring frequently, for 20 minutes.
- In a small saucepan, melt the butter. Add the garlic and sauté for 1 minute. Add the milk and bring to a simmer.
- Add the Parmesan cheese and the butter mixture to the polenta. Stir to combine. Add the salt, black pepper, thyme, basil, oregano, marjoram, parsley, and red pepper flakes and stir to combine.
- Add the wild mushrooms and cook for 5 minutes, or until the mushrooms are tender.

- Feel free to use any type of mushrooms you like in this recipe.
- Serve the polenta with additional Parmesan cheese on top, if desired.
