Ingredients

  • 250g (8.8oz) spaghetti pasta
  • 100g (3.5oz) pancetta or bacon, diced
  • 2 cloves of garlic, minced
  • 50g (1.8oz) grated Parmesan cheese, plus extra for serving
  • 1 large egg
  • 1/2 teaspoon salt, or to taste

Directions

  1. Start by cooking the spaghetti pasta according to the package directions. Make sure to cook it al dente for the perfect texture.
  2. In a skillet, cook the pancetta or bacon over medium heat until it turns crispy and golden brown. Once cooked, remove from the heat and drain on paper towels to remove excess grease.
  3. In the same skillet, add the minced garlic and sauté for about a minute until fragrant.
  4. Drain the cooked spaghetti and immediately add it to the skillet with the pancetta or bacon and garlic.
  5. While the spaghetti is still hot, add the grated Parmesan cheese, cracked egg, and salt. Quickly toss everything together until the egg creates a creamy sauce that coats the pasta.

Notes/Tips

  • If you prefer a vegetarian option, you can substitute pancetta or bacon with diced Roma tomatoes for a lighter version.
  • Make sure to add the egg while the spaghetti is still hot to cook it and create a creamy sauce. The residual heat from the pasta will cook the egg without scrambling it.
