Ingredients

- 2 large eggs

Directions
- In a saucepan, combine water, butter, sugar, and salt. Bring the mixture to a boil.
- Reduce heat and add flour, stirring continuously until the mixture forms a smooth dough and pulls away from the sides of the pan.
- Transfer the dough to a mixing bowl and let it cool slightly. Then, add eggs one at a time, incorporating each one fully before adding the next.
- Stir in the lemon zest to the dough until well combined.
- Heat vegetable oil in a large, deep pot to 375°F (190°C).
- Scoop small portions of the dough and carefully drop them into the hot oil, frying until golden brown and puffed up.
- Remove the Zeppole from the oil and place them on a paper towel-lined plate to drain excess oil.
- Sprinkle with powdered sugar and cinnamon, if desired, before serving.
