Tofu dengaku: grilled tofu with a savory miso glaze
Tofu Dengaku: Grilled Tofu with a Savory Miso Glaze
Introduction
Tofu dengaku is a traditional Japanese dish that features grilled tofu topped with a flavorful miso glaze. This dish is not only delicious but also a great source of plant-based protein, making it a popular choice among vegetarians and vegans. The contrast between the crispy grilled tofu and the umami-rich miso glaze creates a harmonious blend of flavors that will tantalize your taste buds.
Ingredients
- 1 block of firm tofu
- 3 tablespoons white miso paste
- 2 tablespoons mirin (Japanese sweet rice wine)
- 1 tablespoon sugar
- 1 tablespoon soy sauce
- Sesame seeds and sliced green onions for garnish
Directions
- Press the tofu to remove excess water. You can do this by wrapping the tofu block in a clean towel and placing a heavy object on top for about 15-20 minutes.
- Cut the tofu into cubes or rectangles, depending on your preference.
- In a small saucepan, combine the miso paste, mirin, sugar, and soy sauce over low heat. Stir until the sugar is dissolved and the mixture is well combined to create the miso glaze.
- Preheat your grill or stovetop grill pan over medium-high heat. Lightly oil the grill to prevent sticking.
- Grill the tofu for about 2-3 minutes on each side, or until grill marks appear and the tofu is heated through.
- Using a brush, generously coat the grilled tofu with the miso glaze. Continue to cook for another minute until the glaze caramelizes slightly.
- Remove the tofu from the grill and place it on a serving dish. Sprinkle with sesame seeds and sliced green onions for added flavor and garnish.
- Serve the tofu dengaku hot as a delicious appetizer or as a main dish with steamed rice and vegetables.
